We have been studying Australia in school this week & lastand this was a recipe that is made a lot down there...apparently.
The recipe was in the book we are reading about Australia.
They are VERY good! I was surprised.
Lamingtons
4 eggs
3/4 cup sugar
1/2 tsp vanilla
3/4 cup sugar
1/2 tsp vanilla
3/4 cup flour
1/4 tsp salt
1 tsp baking powder
Preheat oven to 375.
Seperate the egg yolks from the whites into 2 bowls.
Add 1/4 cup sugar to the egg yolks and mix. Set aside.
Add 1/4 cup sugar to the egg yolks and mix. Set aside.
Beat the egg whites until stiff peaks form. Add 1/2 cup sugar.
Fold egg yolk mixture into egg white mixture.
Add Flour, vanilla, salt, & baking powder
mix until smooth.
Pour batter into prepared pan
(9X12 greased with wax paper to fit inside)
Bake about 12 minutes or until center springs back.
Allow cake to cool for a few minutes, then turn onto a

Remove the wax paper carefully.
Cut the cake into 12 or 16 squares. Cool completely.
Icing
2 cups powdered sugar
1 1/2 TBL melted butter
3 TBL cocoa
boiling water
2 cups coconut
Mix powdered sugar, butter, cocoa & enough boiling water
to make a runny icing.
Dip the cake into the chocolate, and then place in the
coconut and coat all over.
Place on a plate to dry.
Lamingtons can be refrigerated or frozen.
These are actually very yummy!!!
